We use Free Range Pigs and cook over an oak wood pit. The pig is hand turned for up to seven hours which keeps the meat moist and gives it a delicious Smokey flavour. Other meat can be cooked using the oak pit including legs of lamb, whole free range chickens and beef ribs.
